Fenugreek Trigonella foenum-graecum
A traditional herb and spice from India, most Fenugreek comes from Rajasthan. Fenugreek grows wild as a small leafy shrub but is now cultivated as an annual crop and is classed a legume. It has a distinctive sweet smell and the leaves, seeds and roots of the plant are used.
The name Fenugreek is derived from the Latin for ‘Greek Hay’ because the herb was added to inferior hay supplies for livestock to prevent it from deteriorating.
